Blueberry-Walnut Overnight Oats – Redux
Shame on Me!
Who starts a blog post like that? Oh, I do! Why? Because I’m feeling a little bit like a slacker dietitian, because…well…because I’ve NEVER made overnight oats. Nope, never have. I know, crazy, right? Overnight oats are everywhere and everyone claims they’re awesome. They always look tasty, but I’ve never tried them. When I heard that this month’s Recipe Redux theme was to try a fellow Redux-er’s recipe, I knew I had to try Amber’s Blueberry-Walnut Overnight Oats as my overnight oats “guinea pig.”
Here’s Amber’s recipe tagline: “This easy make-ahead breakfast recipe is packed with blueberry-walnut goodness and will keep you feeling full all morning!” Pretty great, right? I don’t know about you, but my body needs something that can fuel me all morning long. So if Amber promised me this would be my golden breakfast ticket, I believed her. Why? Well, because she’s a fellow dietitian and foodie, like me! And she has an amazing website where she shares all kinds of sage nutrition advice and yummy recipes, over at Homemade Nutrition.
So it was off to the kitchen to make my first batch of overnight oats. With my fingers crossed and expectations high, I built the overnight oats just as Amber explains in her recipe. “Wow, that was easy,” was all I could think. Thanks for that Amber because my life is certainly crazy enough! A few minutes later my oats were in the fridge, “marinating” and getting yummy for me for the next day’s breakfast.
What happened the next day? Happiness, there was a lot of happiness. First, I didn’t have to cook anything. Awesome. Second, my breakfast was already made. Awesome. And lastly, Amber delivered. This recipe was not only easy, it was delicious and it DID keep me satisfied! AWESOME!

LOL, I clicked on this recipe because I though to myself “I’ve never made overnight oats and really want to”…so I’ve never made them either! This recipe sounds and looks amazing, can’t wait to try!
