I’m a big fan of breakfast food. Such a big fan that I’ll eat it any time of day. Lunch? Yes! Dinner? Absolutely? Snack time? Um, YES! And while I love almost all breakfast foods, waffles have always been my favorite! Especially the homemade kind. And I’m currently in love with these Buttermilk Whole Wheat Waffles!

Breakfast is for Winners

That’s my personal opinion. Partially because I’d like to think of myself as a winner. I mean, don’t you? Also because breakfast is awesome. It returns me to my human form after hours of slumber. If I don’t eat it, I’m a complete monster. I’m not joking. I’m like the worst version of myself and it’s not pretty. So breakfast is everything.

Waffles are for Winners

I don’t know. It seems like it should be true. Waffles are for winners in my book. And since we’ve established we’re all winners here, then, well, I guess we all get some waffles. May I suggest THESE waffles? These delicious Buttermilk Whole Wheat Waffles? I promise they’ll immediately make you feel like the winner you are.

Buttermilk Whole Wheat Waffles are for Winners

They truly are. I know, I’m getting a bit out of hand with this “winners” stuff, but it’s 9 pm on a Saturday and I’m writing a blog post. Because I’m a winner. LOL. But honestly, these are delicious, theyre stupid-easy to make and you can add stuff to them to make them uniquely yours. So go grab your ingredients, you winner you, and get cooking. Recipe is below, but I’m sure you knew that!

Buttermilk Whole Wheat Waffles

Description

Waffles with a whole wheat twist!


Ingredients

Scale
  • 3 cups low-fat buttermilk, room temp
  • 3 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 2 packed tablespoons light brown sugar
  • 6 tablespoons salted butter, melted and cooled
  • ¾ cup all purpose flour
  • 2 ¼ cups whole wheat flour
  • 1 tablespoon baking powder
  • ¾ teaspoon baking soda
  • ¾ teaspoon kosher salt
  • 1 ½ teaspoons ground cinnamon

Instructions

Whisk the buttermilk, egg, vanilla and brown sugar together in a medium bowl. Stir in the butter. Set aside. 

Combine the flours, baking powder, baking soda, salt and cinnamon in a separate, large bowl. Add the wet mixture all at once and stir until batter is just combined. A few lumps are cool! Let batter rest 10 minutes.

Preheat your waffle iron. Brush lightly with oil (canola, avocado, grapeseed all work) and fill with batter, following manufacturer’s instructions. Repeat with remaining batter. 

Waffles are best served right out of the waffle iron. Otherwise, cool on a wire rack to prevent them from getting soft and soggy.
