Sometimes I need change. It’s not that I don’t love regular, plain-old pancakes. I do. But there’s just something magical and fun about trying something new! So when a bag of pistachios was glaring at me in my pantry, I knew I needed to do something about it. I grabbed those pistachios and created something I like to call Pistachio Strawberry Pancakes.
I live for breakfast. Seriously, I do. I 100% believe anyone who says breakfast is the most important meal of the day. Because I 100% agree. Here’s the proof!
A little over a year ago I posted a recipe for breakfast cookies. I liked that recipe so much, I decided to re-create the recipe with a seasonal twist, by adding pumpkin to it. And I have to say, I’m pretty pleased with how these Pumpkin Breakfast Cookies turned out!
It’s been awhile since I made granola. And for some reason Fall always inspires me to get back to making it. Something about the warm, cozy smell it has while baking makes it feel like autumn is finally here. This Cranberry Pecan Granola certainly celebrates the season with lots of toasty pecans and sweet-tart cranberries. It’s an easy recipe to make and an easy recipe to love!
‘Tis the season for pumpkins, but I’m making banana bread. Not because I don’t love pumpkins, but because I had bananas and well, you know the saying, “if you’ve got brown bananas, you must make banana bread.” What? That’s not a saying? Oh well, it is in my world. And I love bananas and banana bread as well as oats and chocolate chips – so yeah, here comes Chocolate Oat Banana Bread!
Creative breakfasts on weekday mornings are not my forte. That’s why you’ll often see me noshing on PB&J toast. I want you to know that I did my research when it comes to making muffins. I read and read all about the formulas and finally came up with the winner. And so that means, I feel pretty good about these Seriously Berry Muffins!
I have some great food memories from my childhood. One of my favorites is the memory of the smell of blueberry muffins baking. That smell would wake me up from my night of solid (the only kind a kid gets) slumber. And as if in a trance, I would end up in the kitchen (how did I get here?) and slide into my seat at the kitchen island. Next, my mom (as if in a perfectly synchronized muffin dance) would gracefully place one of those magical muffins in front of me, directly under my nose, still warm from the oven. Was I still dreaming? Who cared? Not me! I’ve been on a mission ever since to recreate this blueberry muffin memory.
Are you watching Top Chef at all this season? If not, you should be! I love the creativity of this season’s chef’s and Carrie is becoming my big-time favorite! In fact, this recipe, is a riff on the recipe she made last week. She lovingly calls it “Fancy Toast,” so I’m calling it that too. Because really, anytime you top toast with more than just butter it becomes “fancy,” right?
