Ahhh, the food of summer. It makes me so incredibly happy. Take corn, for example. In the winter, at least here in the midwest, you can’t find it. Well, you can, but it’s in the freezer section. That’s fine and good, but give me that sweet summer corn! I long for it and I am beyond joyful when it shows up in my store!

I want you to know that I did my research when it comes to making muffins. I read and read all about the formulas and finally came up with the winner. And so that means, I feel pretty good about these Seriously Berry Muffins!
There’s something lovely about chicken salad, am I right? But not that chicken salad in that plastic container at the gas station convenience store. That’s the opposite of lovely. I’m talking about the homemade stuff that has big chunks of chicken, just the right touch of creaminess and the perfect amount of “stuff” to make it taste like perfection. You like that too? Great, than you’ll love this CREAMY GREEK CHICKEN SALAD!
My brain is completely stuffed with tacos. Every single time I try to think of something besides tacos, I think of tacos. And it makes sense, considering my cookbook, Taco! Taco! Taco! just dropped (that makes me sound like a hip pop star, right? No? HA!). So, you would think I would be creating a recipe for something other than tacos, but nope, I’m not. I’ve had this weird craving for tacos stuffed with veggies, so yep, I came up with these Spicy Grilled Vegetable Tacos.

Besides loving tacos and Mexican food, in general, I love a great margarita. Not the super sweet, frozen kind, but the kind where you can taste the tequila and lime juice. I also happen to really love a good agua fresca. Have you had one? Talk about yummy and refreshing! Yep, so I did just what you’re thinking – combined the two to make this Dragonfruit Mango Agua Fresca-rita!
The cauliflower craze is still going strong and I’m happily enjoying it! Ricing cauliflower has been a pretty big deal lately, but I’m a big fan of roasting big, beautiful florets of it.
