Every year Mother’s Day rolls around and I always find myself asking, “what am I going to get my mom?” I start feeling anxious about it too. I mean, is there really any gift that encapsulates the love I feel for this amazing woman? So you see, nothing ever seems adequate. This year I started to get that anxious feeling and then, by some grace of God, I felt a wave of calm wash over me. A voice telling me to sit down and reflect. So I did…and Mexican Wedding Cookies came to mind.

I refuse to make this post about Cinco de Mayo. Instead, I want to talk about salsa. It’s one of my favorite condiments for so many reasons. This post is a profession of my love for salsa. I made something fancy for you. Something you’d find on the menu at a bistro. A French bistro. The kind with wrought iron tables set with fine china. The kind where you see (and yearn to be the) people sipping rosé and wearing dark sunglasses and white linen pants. I’ve never been to France, but this is how I imagine every bistro there. Super cool without even trying. Kind of like this tuna salad, super cool without even trying!

I’m not going to lie to you, I do buy my salad dressing. There just happen to be a few that I really like and so I keep them on hand. But, I will tell you this, I REALLY like homemade salad dressing. I sure do and right now I’m really loving this Creamy Cilantro Lime Salad Dressing.
If I could be a food, I would be a taco. I would, I really would. Tacos bring so much joy into this world and I would want to be part of that joy. Think about it, have you ever felt mad or sad after eating a taco? No! Just pure joy and happiness. What a life! I make a lot of tacos, and right now I’m loving them veggie style and loaded with beans. And right now these Cumin Chickpea Tacos make me really happy!
Does your family love pasta? I have 2 big pasta lovers in my household. And I grew up with a brother who could’ve probably housed an entire pound of spaghetti all by himself. Me? Not so much. Sure, I like pasta, but it’s not up there on my favorite foods list. So how do I fulfill my family’s pasta needs? I compromise with pasta salad!
