Here’s a little known fact – I’m a BIG fan of waffles. I might even say that they’re one of my favorite foods. I grew up on the sweet kind, but recently, I’ve become a huge fan of a good savory waffle. And I think this recipe for my Cabot Seriously Sharp Cheddar-Green Chile and Ham Waffles will win over any “I-prefer-only-sweet-waffles” people out there.

DIY Sharp Cheddar-Chile & Ham Waffles

Cheddar cheese, chiles and ham in your waffles? Crazy? Absolutely NOT! If you think about this combination, it just makes sense. Ham and cheese – it’s a classic pairing! And how about adding a little spice with green chiles? Um, YES! With these additions, these waffles take on a Southwest vibe making them lovely when topped with salsa, sour cream and avocado! I love their versatility too! They’re awesome for breakfast, but also make a great lunch or dinner too!

Tips and Other Ideas for my Sharp Cheddar-Green Chile & Ham Waffles

  1. Make a double batch! If you’re anything like me, you use your freezer to support your weekly meal plan! Having a few of these waffles at the ready means you’ve got an easy meal ready to go at a moments notice. Everyone wins in that scenario!
  2. Experiment! Feel free to make your own flavor modifications! I personally think these would be lovely with some other kinds of chiles or even herbs!
  3. Don’t over-stir it! The batter does not require lots of whisking. Just give it a few good turns around the bowl to make sure most of it is incorporated and then get that waffle iron going. Playing with the batter too much will lead to a tough, flat, sad waffle.

Sharp Cheddar-Green Chile & Ham Waffles

Description

Make a big batch of these Sharp Cheddar-Chile and Ham Waffles and serve them up for breakfast, lunch or dinner.


Ingredients

Scale
  • 2 cups low-fat buttermilk, room temperature
  • 2 large eggs, room temperature
  • 1 packed tablespoon light brown sugar
  • 4 tablespoons salted butter, melted and cooled
  • ½ cup all purpose flour
  • 1 ½ cups whole wheat flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 1 ounce thinly sliced deli ham, chopped
  • 1 cup grated Seriously Sharp Cabot Cheddar Cheese
  • 1  (4 ounce) can diced green chiles, drained
  • 1 tablespoon chopped fresh chives

 

Toppings: salsa, sour cream, avocado

 


Instructions

  1. Whisk the buttermilk, eggs and brown sugar together in a medium bowl. Gradually whisk in the butter. Set aside. 
  2. Combine the flours, baking powder, baking soda and salt in a large bowl.
  3. Add the wet mixture all at once to the dry and stir until batter is just combined. A few lumps are fine! Fold in ham, cheese, chiles and chives. Let batter rest 10 minutes.
  4. Preheat waffle iron. Brush lightly with oil (canola, avocado, grapeseed all work) and fill with batter. Cook following manufacturer’s instructions. Repeat the process with the remaining batter.
  5. Waffles are best served right out of the waffle iron. Otherwise, cool on a wire rack to prevent them from getting soft and soggy.
  6. Serve with toppings of your choice!
